I’m in the booze business and you wouldn’t believe the convoluted and ridiculous laws and regulations we have to deal with…well actually, you’re a lawyer, so you would believe it. And you’re right about the ATF.
With Bourbon, it’s all about the aging in charred oak and the mash-bill which has to be at least 51% but is usually a good bit more. JD uses a different distillation method with the charcoal filtering.
There was a time when Indiana, Virginia, and many other states had thriving Bourbon distilleries. Unfortunately, more and more are going out of business due to lack of demand. And while there are dozens and dozens of Bourbons, there are only just a handful of distilleries. As time goes on, more and more labels will fade with younger customers going for vodka, rum, and specialty cocktails.
The Bourbon trail is a true American treasure and we can all help…one drink at a time.
As an aside, the same thing is happening with Canadian blends. At least one a year disappears. It’s a shame.
